摘要:为了评估桤木树皮作为生物活性多酚化合物的可再生来源的潜力,从生长在拉脱维亚的两种桤木(灰桤木和黑桤木)树皮中分离出的亲水提取物和原花青素(PAC)的抗氧化性能,采用ABTS●+、DPPH●两种测试系统进行了研究。实验结果表明,PAC具有很强的自由基清除能力。树皮PAC的多酚性质为其作为食品添加剂的应用开辟了可能性。PAC作为蛋黄酱的抗氧化剂具有良好的潜力。
