The mass ratio and the moisture decreased, the chlorophyll and the carotenoids content recorded as opposite trends with degradation of chlorophyll and synthesis of carotenoids occured simultaneously, the most specially, the TPC increased and reached to maximum value at III maturity and decreased after. 摘要

本研究旨在测定产自越南天江省的天堂芭蕉(Musa paradisiaca)和尖叶芭蕉(Musa acuminata AA)品种果皮在03个成熟阶段(颜色指数为08成熟阶段的I、III和VI)的一些生理特性(质量比、水分)和生化特性(叶绿素、类胡萝卜素和总多酚(TPC)含量。结果表明,1 ~ 6个成熟期对02个香蕉品种果皮的质量比、水分、叶绿素、类胡萝卜素和TPC均有显著影响,且有不同的变化趋势。质量比和水分下降,叶绿素和类胡萝卜素含量呈相反趋势,叶绿素降解和类胡萝卜素合成同时发生,其中TPC增加,在III成熟时达到最大值,之后下降。结果表明,两个香蕉品种的果皮可以有效地提取多酚类化合物。
