Understanding the functionality of lipid-based materials under large-amplitude nonlinear deformations

Lipid-based materials meet many functions such as oil binding, lubricity and rheology. In this article, we focus on their rheological function, specifically in nonlinear viscoelastic properties, which we characterize using a novel approach known as large amplitude oscillatory shear (LAOS).
