This research was conducted using Randomized Block Design Factorial consisting of 2 factors that is the type of solvent (J) consisting of ethanol and methanol, as well as the second factor which is the type of acid (P) consisting of tartaric acid, citric acid, and acid acetate. Based on the analysis it was found that the anthocyanin pigment (in red) in rosella petals flower is more stable in the acidic conditions (low pH). Type of acid (P) gives a very significant influence (P ≤ 0.01) toward pH values and significant influence (P ≤ 0.05) toward the intensity of the color. 摘要

花青素是一种红色、紫色和蓝色的色素,常见于植物中,可用作天然染料。玫瑰花瓣是一种可以提取天然染料并含有花青素的植物。溶剂和酸的使用是决定玫瑰花瓣花青素提取质量和数量的因素。因此,本研究将对萃取玫瑰花瓣花青素过程中溶剂和酸的选择对花青素提取的影响进行研究。使用的类型是玫瑰茄品种。本研究采用随机区组设计析因法进行,析因法由2个因素组成:溶剂类型(J)由乙醇和甲醇组成;酸类型(P)由酒石酸、柠檬酸和乙酸组成。通过分析发现,玫瑰茄花瓣中的花青素色素(红色部分)在酸性条件下(低pH)更稳定。酸的类型(P)对pH值的影响非常显著(P≤0.01),对颜色强度的影响显著(P≤0.05)。所用溶剂类型(J)对颜色强度有极显著影响(P≤0.01),对花青素得率和含量有显著影响(P≤0.05)
