For lipoxygenase, a similar decrease in activity reaction was noticed at temperatures of drying agents starting from 80 °C. For other factors, no similar results were recorded. This means that the activity of enzymes, in particular, lipase and lipoxygenase, plays a key role in the physiological processes of soybean seeds during storage, but can be inhibited at temperatures starting from 80 °C. Desiccants application accelerates the maturation of the seed to the necessary moisture content for two weeks.
