摘要

由于青铜峡地区的特殊气候条件,葡萄从成熟阶段就具有高糖和低可滴定酸度的特点。因此,根据其他地区的糖和可滴定酸度的比例来确定葡萄成熟度的常用方法在青铜峡是不合适的。本研究旨在寻找一种简便易行的确定青铜峡葡萄最佳采收期的方法,为提高青铜峡葡萄酒的品质提供一定的理论依据。对梅洛和黑比诺在不同成熟阶段的酚类物质含量和一些基本理化参数进行了评价。结果表明,不同采收时间对梅洛和黑比诺的酚类物质含量和理化参数有显著影响。筛选出果皮花青素总含量和种子酚类物质总含量作为评价多酚成熟度的两个重要指标,以更好地提高葡萄和葡萄酒的品质。
