Non-targeted metabolomics analysis showed significant disturbances in carbohydrates, amino acids, and secondary metabolite levels. Additionally, KEGG pathway analysis revealed the down-regulation of amino acid metabolites in both vegetables, alongside an up-regulation of flavone and flavonol biosynthesis in pak choi.
