Secondly, it is found that 0.15% treatment group can better maintain the quality characteristics of Harbin red sausage according to texture profile analysis (TPA), electronic nose (<em>E</em>-nose), and electronic tongue (E-tongue) (<em>P</em> &lt; 0.05).
