摘要

本研究的目的是针对Sidoarjo地区中小企业油炸洋葱在油炸工艺上仍存在的问题提供解决方案。采用的方法是利用洋葱解析器上的TTS (Temperature, Timer, Speed Control)技术,制作出质量好、烹调温度稳定的油炸洋葱。预期的结果是将炸洋葱的质量生产率提高到原来只能炸洋葱2公斤的两倍,一次炸可以炸到4公斤
