The variety ‘Aligote’ is taken as a control. The production period duration for ‘Spartanets Magaracha’ variety was 132 days, corresponding to the early-medium time of ripening, and for ‘Riesling Magaracha’ variety - 144 days, corresponding to the medium ripening period. According to the potential of heat supply, the soil-climatic conditions of the western piedmont-coastal region of Crimean viticulture (3640 ºС) can be considered as favorable for cultivation of the studied grape varieties. The varieties studied exceed the control variety in terms of the indicators: \"fruiting coefficient\" ‒ 1.1‒1.16, \"average bunch weight\" ‒ 220.0‒240.0 g, \"yield per bush\" - 3.36-3.52 kg/bush, and \"shoot productivity by the raw bunch weight\" ‒ 242.0‒278.4 g/shoot. The Centennial Seedless variety is cultivated in a covering and grafted culture on a SO4 rootstock. Drip irrigation. The soils are low-humus, leached powerful chernozems. The average air temperature of the winter months (December-February) of the studied 2021/2022 was 2.3 °C higher than the climatological norm of 1991‒2020. The absolute minimum was observed in the third decade of December and amounted to 13 °C. The transition of air temperature through +10 °C occurred on March 31. The average temperature of the growing season (April-September) was +20.1 °C, 0.1 °C less than climatological norm. The absolute maximum air temperature was observed in the second decade of September – +38 °C, which is extremely atypical for this area. The total precipitation was 77 mm more than climatological norm and amounted to 427 mm. Uvological assessment of bunches was carried out in three variants of the bush load with shoots and bunches: variant 1 (control) – the maximum load with shoots (36 pcs./bush) and bunches (27 pcs./bush); variant 2 – the average load with shoots (23 pcs./bush) and bunches (15 pcs./bush); variant 3 – minimum load of shoots (13 pcs./bush) and bunches (8 pcs./bush). During the uvological analysis of grape bunches a variant with an average bush load with shoots (23 pcs./bush) and bunches (15 pcs./bush) highlighted according to the following parameters: length and width of the bunch, average berry weight, proportion of berries and stalks in the bunch, number of berries per 100 g of bunch, average weight of 100 berries, pulp weight in 100 berries. The variant with the maximum load of bushes with shoots (36 pcs./bush) and bunches (27 pcs./bush) highlighted by weight of bunches, the weight of pulp and rudiments in a bunch, the number and weight of rudiments in a berry, the average weight of rudiments in 100 berries. The studies were carried out on the Don ampelographic collection named after Ya.I. Potapenko (Novocherkassk, Rostov region). Varieties were studied in grafted covering culture. The Gok Izyum variety in the conditions of Novocherkassk had an average ripening period, had 60% of fruitful shoots, an average bunch weight of 260 g, and a yield of 80 c/ha. Dry white wine from this variety was pale straw with a slight greenish tint. It had a bright aroma of field herbs, honey and fruits, which over time is transformed into noble tones of aging. Wine tasting score 8.5 points. Variety Khotsa Tsibil in the conditions of Novocherkassk had a medium-late ripening period, had 62% of fruit-bearing shoots, an average bunch weight of 235 g, a yield of 100 c/ha. Dry white wine from this variety had a pale straw color with a greenish tint, had a delicate aroma of flowers and fruits. The taste is delicate, elegant with a spicy bitterness. Has the potential to endure. Wine tasting score 8.5 points. The control variety Risling Rejnskij average ripening period, 66% of fruit-bearing shoots, an average bunch weight of 100 g, and a yield of 46 c/ha. Wine of pale straw color with a greenish tint, rich aroma with tones of field herbs and flowers, turning into taste. The taste is full, harmonious. Degustation score of wine 8.7 points. The studied varieties Gok Izyum and Khotsa Tsibil were superior in average bunch weight and yield to the control variety Risling Reinskiy, but not significantly inferior in quality of wine products (8.5 and 8.7 points, respectively), therefore, we believe that these studied varieties are promising for high-quality winemaking. The inclusion of hydrolyzable gallotannin in the treatment regimen will allow the binding of high molecular weight proteins that are not removed by bentonite. To date, the market for auxiliary materials for winemaking is extensive, which requires checking their technological properties in order to select the most effective preparation. Three preparations of gallotannin from different manufacturers were studied in the work. The studies were carried out on dry white wine materials with the introduction of proteins of different molecular weights. Evaluation of the effectiveness of the preparations was carried out by tannin tests. The research was carried out in the laboratory of winemaking technology in microwinemaking conditions. The mass of one batch of grapes was 5‒10 kg. In the wort of the studied forms, the following indicators were determined: titratable acidity, sugar con-tent, pH value, glucoacidometric index. White dry wine materials were prepared according to the classical technology. In the studied sam-ples of wines, the main physical and chemical indicators were determined. To determine the biologi-cal effectiveness of the fertilizer on grapevine, foliar feeding of Cabernet Sauvignon plants was carried out during the phase of inflo-rescence advancement and 15 days after. Foliar feeding of plants with organo-mineral fertilizer had a positive effect on the formation of berries and clusters, contributing to an increase in their mass. At the drug consumption rate of 5.0 l/ha and 7.0 l/ha, both the number of berries in a bunch and the weight of one berry significantly increased compared to the control. The use of organo-mineral fertilizer also contributed to bet-ter pollination and an increase in berries in bunches, which together contributed to an in-crease in yield, depending on the applied con-sumption rates, by 8.7‒11.6 %. Estimation of quality characteristics of berry juice during har-vesting showed its compliance with standard varietal conditions in all variants of the experi-ment, despite the significant differences in the mass concentration of sugars between the con-trol and variant 3 (7.0 l/ha). The acidity of berry juice differed insignificantly between the vari-ants and the control. When feeding plants with organo-mineral fertilizer, the growth activity of shoots significantly increased in all variants of the experiment compared to the control variant. An increase in the activity of growth processes led to a decrease in shoot maturation (73.2‒74.4 %) at all drug consumption rates compared to the control (84.9 %). The objects of the study were must and wines prepared under conditions of micro winemaking from red grapevine varieties of interspecific origin bred by ARRIV&W, a branch of FSBSI FRASC ‒ Denisovsky, Cab-ernet Severniy, Augusta, Cabernet Sauvignon (control), according to the classical technology adopted for red dry wines. As a result of the study the following results were obtained. In must of all studied varieties the predominance of tartaric acid over malic acid was observed in several times, while in the interspecific grape-vine varieties the concentration of tartaric acid was 5‒6 times higher than malic acid, while in the control only 2.5 times higher. The greatest amount of tartaric acid was observed in the must from Cabernet Severniy grapes ‒ 5.6 g/dm3. Malic acid accumulation was signifi-cantly lower in all variants (0.48‒1.1 g/dm3) compared with the control Cabernet Sauvignon (2 g/dm3). There was a slight accumulation of succinic acid in the must from Denisovsky and Cabernet Severniy grapes. In all variants, with the exception of Augusta wine, the concentra-tion of tartaric and malic acids decreased. The total proportion of tartaric and malic acids in the experimental wines was 38‒74.7 % of all acids in wine. We have studied taxonomic levels, qualitatively differing from each other by landscape-forming factors, taking into account the degree of influ-ence of these individual factors and their dif-ferent correlations with each other on the growth of the grapevine plant, the yield of vineyards, the quality of the vineyard and vini-cultural products. Landscape-forming factors at the microrelief level are geology, relief, soil and groundwater. The study was held on the basis of Ya.I. Potapenko All-Russian Research Institute for Viticulture and Winemaking on the native Don variety Krasnostop zolotovsky. The aim of the work was to study the effectiveness of the use of hydrogel for the post vitro stage. The ways of its application were investigated. Hy-drogel was added to the soil substrate in a dry form and in a gel-like form saturated with nu-trients. As a result, it was noted that the hydro-gel does not affect survival. For all variants of the experiment, it was 98‒100 %. There was a positive effect of adding the water-retaining drug Aquasin to the substrate on the growth and development of plants. This was especially reflected in such indicators as leaf surface area, maturation and diameter of shoots. The positive effect was achieved on the 80‒90 day of adap-tation. In addition, the possibility of pre-saturation of the superabsorbent with im-munostimulants or fertilizers is of interest. In recent years, an increase in the number and harmfulness of sucking pests of thrips and leafhoppers has been noted in the Rostov region, which is due to climate change, the weakening of organiza-tional and economic measures and agricultural practices (an increase in the number of waste lands and the spread of weeds on them). The research was carried out in the conditions of the experimental fields of the \"Novocherkassk\" and \"Nizhenekundryuchensky\" departments on the varieties Cvetochniy and Cabernet Severny. So, in the conditions of 2021, two generations of grapevine thrips, three generations of roseate cicadas and one generation of ceres-buffalo ci-cadas developed. In the course of monitoring studies, we found that the most widespread populations in the conditions of the vegetation period of 2021 were: the roseate cicada and the ceres-buffalo cicada, which were identified both in the conditions of the experimental field of the Novocherkassk branch (more South – Novocherkassk) so it is in the conditions of the experimental field of the \"Nizh-nekundryuchenkso\" department (more northern – Ust-Donetsk district).
