The process of distilling wine material was carried out in two stages. Primary distillation to obtain raw alcohol was carried out on a distiller, and secondary distillation to obtain rectified alcohol was carried out on a small distillation unit with electric heating. It was found that during the primary distillation of Cvetochniy wine material for raw alcohol, the content of aroma-forming substances depended on the content of titrated acids and the varietal characteristics of raw material. Rectification made it possible to reduce significantly the concentrations of undesirable volatile components (isobutanol, isopentanol and others). According to the content of noble aroma-forming substances in the obtained distillation products, it was found that the grapes of Cvetochniy variety are suitable for preparation of strong drinks. The long-term data on weather stations of the Crimean peninsula are analyzed. The following climatic indices characterizing the growing season and the ripening period of grapes are calculated: the sum of temperatures above 20 °C, the ratio of the sum of temperatures above 20 °C to the sum of temperatures above 10 °C, the Huglin and Winkler indices, the average temperature of the growing season, the Selyaninov hydrothermal coefficient, the sum of precipitation for the year and the growing season. In addition, the main agroecological factors limiting the possibility and efficiency of growing grapes are considered: the average of the absolute minima of air temperature and the sum of active temperatures above 10 °C. With the help of geoinformation modeling, a digital complex map of the spatial distribution of index data on the analyzed territory is constructed. The distribution of territories in the central part of the Steppe zone of Crimea that are not suitable for planting vineyards is analyzed: with unfavorable soil conditions, with a height of more than 600 m above sea level, with a slope of more than 20 degrees, as well as lands of forest and nature reserves. As a result of a comprehensive analysis of agroecological conditions on the territory of the eastern part of the Steppe zone of Crimea, 10 ampeloecotopes were identified, including: on the territory of the Kirovsky district – 9, Leninsky district – 7. Muscat Aksaiskiy was control variety, which is included in the State Register of Varieties Approved for Use in the Russian Federation. The research was carried out in the laboratory of ampelography and technological evaluation of grapevine varieties in the conditions of micro-winemaking. The weight of each batch of grapes was 5−20 kg. The main physico–chemical indicators of grapes, as well as the glucoacidometric indicator and the technical maturity indicator were determined. Chemical parameters were determined in the prepared wine samples, an organoleptic assessment was carried out. Potapenko (Novocherkassk, Rostov region) in 2022. The varieties were studied in grafted culture (rootstock Kober 5BB). Planting scheme was 3.0×1.5 m. The study of grapevine varieties was carried out using methods generally accepted in viticulture and State Standards. The object of the research was 20 table and seedless grapevine varieties of various origin and maturation dates. Very high sugar content of berry juice had the varieties: Einset Seedless (25.4 g/100 cm3) and Nizina (23.5 g/100 cm3). Titrated acidity ranged from 3 g/dm3 (Esenin) to 7.6 g/dm3 (Bogotyanovskij). After taking measurements of bunches and berries, we note that the largest bunches had the varieties: Valentina, Kishmish Uzbekistan, Aku-Aku, Dolchatyj, Roshfor, Vostorg (length from 20.8 to 26.9 cm); the largest berries (in diameter) – Valentina, Bogotyanovskij, Talisman (from 25.3 to 29.5 mm). The highest average berry weight had the varieties ‒ Valentina (11 g), Bogotyanovskij (9.6 g), Talisman (8.9 g), Kardinal Ustojchivyj (8.1 g), Nizina (8.0 g). The following varieties received high degustation ratings: Kardinal Ustojchivyj (8.6 points), Roshfor (8.5 points), Aku-Aku (8.4 points), Talisman (8.1 points), control varieties – Dolchatyj (8.2 points). The lowest tasting rating among table varieties (at the level of 7.0‒7.5 points) had native varieties – Buryj and Efremovskij. Among seedless varieties, the following varieties received high tasting ratings: Kishmish Uzbekistan (8.8 points) and Einset Seedless (8.7 points), which is higher than the control variety Korinka Russkaya (8.3 points). The white rot distribution is noted mainly in the southern regions with high humidity and frequent hail. Without protective measures, crop losses can be 20-50%, and in some cases up to 80%. The symptoms of the disease directly dependent on vegetative stage of berries - from the end of the period of herbaceous growth till veraison. Under conditions favorable for the disease spread, white rot can infect shoots, stems and leaves. Meteorological conditions during the growing season 2019, 2020 were favorable for the development of white rot. The highest intensity of white rot damage to vineyards in 2019, (more than 2.5 points), was found in the varieties: Tsimlyanskiy belyy, Sivolistnyy, Risling reynskiy, Sibirkoviy, Cabernet Sauvignon, Pukhlyakovskiy belyy, Olkhovskiy, Varyushkin. The development of white rot in 2020, despite the meteorological conditions favorable for its spread, was restrained by the use of Horus, VDG in herbaceous growth and veraison phases. Therefore, the intensity of white rot in 2020 in most varieties was absent or did not exceed 1 point. To the greatest extent (1.0 ... 1.8 points) the following varieties were affected by the phytopathogen: Tsimlyanskiy chernyy, Olkhovskiy, Neizvestnyy donskoy, Risling reynskiy, Krasnostop zolotovskiy, Bessergenevskiy №1, Silnyak, Durman, Bezymyannyy donskoy, Sibirkovyy, Cabernet Sauvignon. To set up the experiment, we used the graft grapevine variety Fioletoviy Ranniy, rootstock ‒ Kober 5BB. We studied the efficiency of rootstock vine soaking in solutions of the growth stimulator Epin and short-term treatment of copulation sections on grapevine cuttings with Epin, Kornevin and Symbionta stimulants. It was established that the treatment of rootstock cuttings with Epin's solution for 20 hours inhibits growth processes, has a negative effect on the growth of shoots and the development of the leaf surface. We have studied taxonomic levels, qualitatively differing from each other by landscape-forming factors, taking into account the degree of influence of these individual factors and their different correlations with each other on the growth of the grapevine plant, the yield of vineyards, the quality of the vineyard and vinicultural products. Landscape-forming factors at the microrelief level are geology, relief, soil and groundwater. Potapenko Institute for Viticulture and Winemaking, from 1983 up to our days. The technology of clonal micropropagation of grapevine with the help of apical meristems with a size of 0.1‒0.2 mm has been developed. New biotechnological techniques were developed and improved at all stages of micropropagation from the formation of meristematic zones to planting vine in the ground. Improved planting material was obtained, which, according to the phytosanitary state, belongs to the category (Virus free) ‒ a material free from all known viruses and virus-like diseases (base material of class A). A basic nursery was created in the Nizhne-Kundryuchensky department of the experimental field. An unconventional method of breeding of grapevine seedlessness has been developed, which is based on the prevention of degenerative processes in the cotyledon when crossing both seedless parents and the subsequent culture of isolates.
