In this communication, the transformation of naringin and naringin present in orange (citrus sinensis) and mousami (citrus limetta) peel powders to naringenin and neohesperidose using the enzyme extract and its fungal source, respectively, have been reported. Abstract
A diglycosidase which can transform naringin directly to naringenin and neohesperidose has not been available in the literature till recently. In a previous communication, the authors have reported the transformation of naringin to naringenin and neohesperidose using pure preparation of a fungal diglycosidase. In this communication, the transformation of naringin and naringin present in orange (citrus sinensis) and mousami (citrus limetta) peel powders to naringenin and neohesperidose using the enzyme extract and its fungal source, respectively, have been reported. The results of the reported studies have great significance from the point of view of citrus fruit industries which generate huge amounts of waste containing naringin.
