The selected transcripts were particularly paid attention to have high expression levels for a higher possibility of being detected in processed meat products. Abstract

Meat and meat products constitute an important part of human diet. Yet, in order to meet consumers' increasing demand for meat products and manufacturers’ demand to lower the expenses, usage of offal tissues in meat products are prevalent as food adulteration.
