Size-weight composition is investigated for rainbow golden trout grown in aquaculture, minerals and fatty acids content is determined for hot-smoked products of this species, and quality indicators and nutritional value are evaluated for both raw materials and the products to examine possibility of the enrichment with selenium by adding a selenium-containing preparation to fish feeds and to estimate effect of such feeding on commercial, nutritional and consumer properties of the products. The fish from the experimental group fed by the feeds with preparation Kormogran Selenium-3 had more valuable mineral and fatty acid composition of meat, higher yield of edible parts, and better organoleptic properties of smoked products in comparison with the control group. Abstract

Scientific and practical aspects are considered for development of functional nutrition products from fish raw materials after lifetime enrichment of the fish muscle tissue with selenium. Size-weight composition is investigated for rainbow golden trout grown in aquaculture, minerals and fatty acids content is determined for hot-smoked products of this species, and quality indicators and nutritional value are evaluated for both raw materials and the products to examine possibility of the enrichment with selenium by adding a selenium-containing preparation to fish feeds and to estimate effect of such feeding on commercial, nutritional and consumer properties of the products.
