The reseacrh used experimental method with Completely Randomized Design (CRD) with four treatments and each treatment was repeated five times. The treatments were arranged as follows: T0 (soybean meal + tannin 0%); T1 (soybean meal + tannin 0.5%); T2 (soybean meal + tannin 1%), and T3 (soybean meal + tannin 1.5%). The data were analyzed by Polynomial Orthogonal and Duncan test. The result of the research showed that protein protection of soybean meal with tannin of banana stem liquid decreased ammonia concentration (P<0,05) significanly with equation y=6.267-11,27x+16x2-6.2x3 (R2 =0.803) and increased undegraded dietary protein (P<0,05) with equation y=29.224+17.025x (R2=0.955).
