Abstract

This article aims to describe production organization and how workers are qualifi ed in dairy industries in the southwest region of Bahia, Brazil. It presents results from a broader research carried out by the Study and Research Group: Work and Education at the Pedagogical Museum of the UESB. The redefi nition of worldwide regulatory standards in food production, as a consequence of the structural transformations of capitalism, brings consequences for the working processes in the dairy business.
