Abstract

Pulsed electric field (PEF) treatment, as a non-thermal micro-organisms processing technology, has great potential in liquid food sterilization, microbial cells electro-manipulation and cell content extraction. Majority of the PEF studies indicated that PEF process can cause the inactivation of microbial cells and enzymes. However, recent study has also shown that PEF treatment can be used to enhance the enzyme activity under certain operation parameters. 1
